I'd like to make my own spreads, using nuts and seeds, without any unnecessary additives, but can't seem to find any recipes.
Also, how long will they keep and what is the best way of storing so they don't go rancid? Can they be frozen?

I have made my own spread before. Simply grinding the nuts until they get pasty. I did this with suflower seeds and added a little honey once ground, to get a nice smooth consistancy to spread. I never tried to freeze it so I can't advise you on that. But you do need to keep it in the refrigerator. Without preservatives, I would assume it would last a couple of weeks in the fridge with an air tight lid.
EXPERIMENT. Grind the nuts until they become pasty...I did mine in a food processor...and then add a little honey to sweeten. I suppose you could do it without the honey, but it is not as smooth and spreadable.

My wife stores sesame butter and almond butter in the refrigerator and it keeps just fine. Yes, it will go rancid sitting in the cupboard for a long time.
