What are some great recipes that are cooked in a cast iron skillet?

I just got a really nice cast iron skillet and besides blackened chicken I do not know what too cook. I like all foods except seafood.What are some great recipes that are cooked in a cast iron skillet?
What can't you cook in a skillet?





I have 2 skillets. One for the oven and one for the stove top.





In the oven, I do cornbread, biscuits and even pies in the skillet. It gives the bottom a nice browning that matches the top.





On the stove, I fry and brown meat. Skillet fried corn, tacos, deer steaks, fried chicken, grilled cheese, bacon, sausage, stir fry, french fries, etc.





Just make sure to season well. Don't mix the pans up. How you use them to cook makes a difference. If it is used in the oven, keep it for the oven. To season well, turn the oven on 350 degrees and lightly coat the pan inside and out with Crisco and put in the hot oven for 30 minutes, then cut the oven off but leave the pan in until the oven is cool.


Never put the pan in water. Use a damp rag and wipe out and immediately dry. If it is a stove top pan, wash with a soapy rag and dry and re-coat very lightly with Crisco.





Of course, I'm from the Deep South and I do mean the Deeeeep South. Learned to cook from the great-grand mother on down. Dont have a single teflon coated pan in my kitchen.What are some great recipes that are cooked in a cast iron skillet?

HAM AND RED EYE GRAVY





2 tablespoons margarine


1 slice of ham, about 1/4-inch thick


2 tablespoons strong, black coffee


1/4 cup water





Melt margarine in skillet and fry ham until done. Remove ham to a platter and keep warm. Add coffee and water to the fat; bring to a boil. Serve gravy with the ham and grits.


For a large slice of ham or two slices, double amount of liquid.


Serves 2 to 4.








The more you use it, the better everything will taste! Just remember to season it

Fried potatoes, you can use it to make fried chicken. I use mine to make a fritata because I can slide it right in the oven to finish cooking. Cornbread is a classic recipe meant for cast iron skillets. Steak is awesome fried in a hot cast iron skillet, too. You will use it a lot and you will have it forever as long as you treat it right.
