What are some recipes that use vanilla pods?

I mean the whole bean pod. I have loads of them and need to think of creative ways to use them in dessert. Thanks.What are some recipes that use vanilla pods?

Use the real vanilla anywhere you use vanilla extract. Slit the bean down the long way, scrape out all the little seeds, and put them in puddings, custard, homemade ice cream, and other desserts.





For sauces, custards and ice cream infuse the milk with a Vanilla pod (stand the pod in the hot milk until a satisfactory taste level is achieved).





Make your own vanilla extract:


SIMPLE VANILLA EXTRACT


This is a simple vanilla extract to make in a glass jar with a lid.





1-cup vodka, brandy, or rum in a glass jar


3 vanilla beans





1. Split the beans the long ways with a scissors or knife and cut in half.


2. Add to glass jar, put a lid on and let sit for 4- 6 weeks.





VANILLA CUSTARD SAUCE - 2 cups whipping cream2/3 c. milk (do not use low-fat or nonfat)1 vanilla bean, split lengthwise6 egg yolks2/3 c. sugarPinch of saltCombine cream and milk in heavy medium saucepan. Scrape in seeds from vanilla bean; add pod. Bring to boil. Remove from heat. Cover and let stand 40 minutes to infuse flavor. Whisk egg yolks, sugar, and salt to blend in medium bowl. Return cream mixture to boil. Whisk into yolk mixture. Return mixture to saucepan and stir over medium-low heat until custard thickens and leaves path on back of spoon when finger is drawn across, about 4 minutes; do not boil. Strain into bowl; discard vanilla bean. Refrigerate until well chilled, about 2 hours.





Apricot Vanilla Bean Muffins





For batter:


1/2 cup unsalted butter, room temperature


1 cup granulated sugar


1 vanilla bean, split lengthwise, OR 1 teaspoon vanilla extract


2 large eggs


3 cups all-purpose flour


1 tablespoon baking powder


1/2 teaspoon baking soda


1/4 teaspoon salt


1 1/2 cups buttermilk


1 cup dried apricots, finely chopped





For topping:


2 ounces almond paste


1/4 cup coarse sugar; see cook鈥檚 notes


1 tablespoon all-purpose flour


1 tablespoon unsalted butter, room temperature





Coat 12-cup muffin pan with cooking spray; set aside. Heat oven to 375 degrees.





Prepare batter: In bowl of heavy-duty mixer, beat butter on medium speed until creamy. Add sugar gradually beat until light and fluffy, about 2 minutes. Scrape vanilla bean seeds into mixture and beat in briefly, or add extract if using. Add eggs, one at a time, beating well after each addition and scraping down bowl once or twice.





Stir together flour, baking powder, soda and salt. In alternating batches, add dry mixture and buttermilk to batter, beating just until blended. Stir in apricots. Divide batter among muffin cups.





Prepare topping: Crumble almond paste in small mixing bowl. Add sugar, flour and butter, mixing to crumbly texture. Dot small amount on top of each muffin.





Bake muffins 25-30 minutes, or until toothpick inserted in center comes out clean. Cool in pan 5 minutes before unmolding on wire rack.





Yield: 12 muffins


Cook鈥檚 notes: Coarse sugar, also called decorating sugar, is sold in cake-decorating shops.
If you stuff a vanilla pod into a jar of caster sugar and leave it for a while before use , you have vanilla flavoured sugar to use in all sorts of recipes.Nice to use when making pancakes , pikelets , cakes , puddings , biscuits , muffins . Anything that requires sugar and is of the sweet variety works nicely . Nice to serve up in a bowl on the table when having freshly brewed coffee too .Very elegant , and no-one will be able to quite put their finger on the little pleaseure you have just served them . A little bit of luxury for minimal effort . Nice .
put it in homeade rice pudding its an indugence thats relly worth it . And some mint leaves.
