Any good cookie recipes for kids to make?

My two children have just asked to make some cookies and I cannot find my usual recipe anywhere!! Has anyone got a simple cookie recipe that we could use?Any good cookie recipes for kids to make?
Try this Delicious recipe:


100g/4oz butter or margarine


50g/2oz caster sugar


50g/2oz light brown sugar


1tsp. vanilla essence


1 medium egg, lightly beaten


225g/8oz self raising flower.

DOUBLE CHOCOLATE CHIP COOKIES:


Replace 25g/1oz flour with cocoa and add 75g/3oz each chopped white %26amp; plain chocolate (or 100g chocolate chips)


PEANUT AND RASIN COOKIES:


Add 50g/2oz each salted peanuts and raisins and 75g/3oz chopped milk chocolate.


CHERRY AND COCONUT COOKIES:


Add 75g/3oz each chopped ready-to-eat dried apricots and glazed cherries and 50g/2oz shredded coconut.

Chewy Brownie Cookie


These cookies are double chocolatey with cococa powder and chocolate pieces.





鈥?2/3 cup shortening


鈥?1-1/2 cups firmly packed light brown sugar


鈥?1 Tbsp water


鈥?1 tsp vanilla


鈥?2 eggs


鈥?1-1/2 cups all-purpose flour


鈥?1/3 unsweetened baking cocoa


鈥?1/4 tsp baking soda


鈥?1/2 tsp salt


鈥?2 cups semi-sweet chocolate chips (12 oz. pkg.)


Method:


1. Heat oven to 375 degrees. 2. Combine shortening, light brown sugar, water and vanilla in a large mixing bowl. 3. Beat at medium speed of electric mixer until well blended. Beat eggs into creamed mixture. 4. Combine flour, cocoa, baking soda and salt. Mix into creamed mixture at low speed until just blended. 5. Stir in chocolate chips. 6. Drop rounded measuring tablespoonfuls 2 inches apart onto ungreased baking sheet. 7. Bake one baking sheet at a time at 375 degrees for 7-9 minutes, or until cookies are set. Cookies will appear soft and moist - DO NOT OVERBAKE. 8. Cool on baking sheet 2 minutes. Place sheets of foil on coutertop. Remove cookies to foil to cool completely.





Number of servings: 3 Dozen Cookies
Buttery sugar cookies are shaped then flattened with the bottom of a sugar-dipped glass.


INGREDIENTS:


1 cup butter


2 cups granulated sugar


2 eggs, well beaten


2 tablespoons milk


1 teaspoon vanilla extract


3 cups flour


2 teaspoons baking powder


1/2 teaspoon salt

PREPARATION:


Cream butter; beat in sugar gradually. Add eggs, milk, and vanilla extract; stir to blend. Combine and sift flour, baking powder, and salt; add gradually to creamed mixture, mixing thoroughly. Cover and refrigerate for 4 hours or overnight.

85g porridge oats


170g choc chips





Pre-heat the oven to 180 degrees celsius.





Grease and line a baking tray





Cream the butter and both sugars together





Beat in the egg and vanilla essence





Sieve the flour, bicarb,baking powder and salt. Add to the mixture with the oats and mix well





Add chocolate chips





Drop dessert spoonfuls of mixture onto a baking sheet





Flatten them slightly with the back of a wet fork





Bake for 12-15 mins until golden





Leave on sheet for 5 mins to cool and then move onto a rack

    Before making a stew with my stewing beef I always boil it with one chopped onion for two hours. Then I make my stew adding small whole potatoes carrots and green beans. In south Louisiana we call it A mulligan stew. Serve over rice.
    boil the stew beef down in water and beef base... when it is falling apart add 1/2 a small can of tomato paste, 1 tbsp flour, and worchestershire sauce. then a few spoons of sour cream and serve over white rice or bread... stroganoff :)
    Sometimes I make a cabernet sauvignon stew and its nice. You could try beef burgundy too.

    1 family sized brownie mix


    1 can cream cheese frosting


    6 oz. chocolate chips


    3 tbsp. milk


    4 tbsp. brandy, rum, or bourbon (optional)





    Prepare brownies according to package directions. If desired, drizzle brandy, rum, or bourbon over brownies while still warm; chill. When completely cooled, frost with cream cheese frosting. In a small saucepan, melt the chocolate chips and milk together. Spread over top of frosting. Chill until chocolate is firm. Yield: 40 to 48 small squares.

    mix in crock pot in this order:


    1 can tomato paste


    1 can tomato juice (like V8)


    1 large can undrained diced tomatoes


    1 can drained rinsed kidney beans


    1 lb browned ground beef (ground turkey or chicken would be OK too)


    1 medium chopped onion


    1 chopped green pepper


    4-5 stalks celery chopped


    1-2 tbls chili powder (I add some to the meat while its cooking also)


    mix in pot, keep on low setting for 5-8 hours or on high for 3-4 hours (or you can bring it to a LOW boil on the stove for about 30 min)What are some recipes that everyone including me will enjoy in Home Economics class?
    Taco Tray or dip.The one you layer everything on a platter.


    Serve with taco chips.for your appetizer.(just a suggestion for another time)





    Quiche is nice for lunch and served with a large fruit filled muffin or cut up fresh fruit.

    hm, you could make an easy baked chicken.


    you just take a box of chicken stuffing. cook it according to the stove-top directions on the box. then you get a few thin-cut chicken breasts. you make little mounds of the stuffing in a baking dish. top with the raw chicken breast pieces (1 per mound), then top with a can or jar of gravy (turkey or chicken). bake in a 375 degree oven for about 15-20 minutes.


    You can do the same thing with thin sliced porkchops, just make pork stuffing, mix it with fresh mushrooms, then top with pork gravy. Bake it for the same amount of time.


    That's a never fail dish, and the meat is always moist.
    This sounds complex but it's not. You can have everything prepared ahead of time and just put together. Here's what you will need:





    1 lb Shredded chicken


    1/2 yellow onion - sliced


    1/2 green bell pepper - sliced


    1 small can mushrooms - drained


    1 small can diced green chilies


    1 small can sliced black olives


    4 oz cream cheese - cut into cubes


    4 oz sour cream


    2 T prepared mustard


    1 bouillon cube (or 1 tsp chicken base)


    1 c water


    2 tsp coriander


    1 tsp black pepper





    Saute onion in a little oil until translucent. Add the bell pepper and cook 2 minutes. Add the cream cheese, sour cream, water, mustard and bouillon cube and stir to mix. Add the black pepper and coriander and stir. When the bell pepper is tender-crisp, add the diced green chilies, black olives, and chicken. Stir until all coated. If the sauce gets too thick, add a little more water. You don't want it soupy but you want it a little thinner than gravy. You can serve it with Mexican Rice and Refried Beans if you'd like. It is good just the way it is if you want it plain.





    I created this recipe after having a wonderful meal in a Mexican Restaurant. Their recipe is called Pollo Con Crema (Chicken in cream sauce). This was the closest I could get to their recipe.

    meatloaf w/ tatos
    Taco Salad





    1 pound Ground beef


    1 package taco seasoning


    1 head of Lettuce


    2 firm tomatoes


    1 medium spanish onion (any will do or just leave out)


    1 can pinto beans, drained


    2 cups Cheddar Cheese


    1 bag Nachos


    1 bottle French dressing





    Brown beef and add seasoning. Cool and drain. Set aside.


    Add pinto beans.


    Cut up lettuce, tomatoes and onion.


    Smash the nachos right in the bag. You want them to be bite sized.


    Add cheese and nachos


    Unless you are serving soon, wait to add the dressing since it can make the cheese and nachos become soggy.
    NO bake cookies.....very easy, and tasty!

    Home made Chicken teryaki...It is so unbelievably easy, yet SO good. And its actually good for ya...who would have guessed. Then make a little fried rice on the side. Its all very simple...even for people who have never cooked.





    1 1/2 lbs. Chicken (I use the tenders cause its easier to remove the fat.)


    1/4 cup water


    1/4 cup soy sauce


    1/2 teaspoon ground ginger


    2 tablespoons molasses(If you spray the spoon with oil, the molasses comes off alot easier)


    2 cloves finely chopped garlic


    Your choice of veggies.


    1 1/2 teaspoon cornstarch





    Cut chicken into bite size pieces and remove fat. Combine water, and next 4 ingredients in a bowl. Add chicken. You can let the chicken marinate for about an hour or so, or you can cook it immediately. Just be sure chicken is covered completely.


    Coat a large skillet or wok with oil (The spray works the best) and place over med-high heat until hot. Add the chicken and your choice of veggies to the pan and cook until chicken is cooked throughly (Usually only takes about 10-15 mins)


    Add cornstartch to the left over marinade in the bowl and mix it with a fork until the lumps are gone. Add it to pan and cook until thickened, stirring constantly.








    The fried rice is even easier.





    2 cups cooked rice


    2 cups cooked veggies


    2 eggs, scrambled


    2 tablespoons soy sauce.


    2 tablespoons chopped Walnuts (Optional)





    Add about 2 tablespoons oil in a pan and place over med-high heat until hot. Add rice and veggies to hot pan and stir fry. Add scrambled eggs and soy sauce. Mix Well. Add walnuts if desired. If needed, you can add more soy sauce. It really just depends on how much rice you use, but 2 tablespoons should be fine.

    Macaroni and Cheese





    1 lb. box elbow macaroni


    1 lb. mild Cheddar cheese, grated


    1/2 c. margarine, melted


    6 eggs


    2 13-oz. cans evaporated milk


    salt and pepper to taste





    Cook macaroni in boiling salted water according to package directions. Drain well and dump into a big bowl. Add grated cheese, reserving 1/2 c. to sprinkle on top. Stir in cheese until melted. Stir in margarine and eggs; stir well to distribute evenly. Add milk. Mixture will be fairly liquid. Pour into 13x9'; pan, sprinkle with reserved cheese on top. Bake at 350F, for 45 minutes, until set. Serves 8.





    Note: I cut the recipe in half for my smaller family, and it was worked out well鈥ever have leftovers.
    Super easy, super cheap, best tasting chicken on the planet. My own creation.





    1 whole chicken ($3-$4). rub it inside and out with kosher salt and fresh cracked pepper. stuff the cavity with a fist-full of fresh rosemary (i grow my own in a container on my back porch). drizzle with lots of honey. cover loosely with foil and bake at 375 for 1 hour. remove the foil and bake for another hour basting every 20 min or so until thermometer reads 180. let it rest for 5-10 minutes before serving. serves 4 very hungry people.





    i usually serve it with couscous ($1.50) and a package of frozen veggies ($1-$2).





    My general conclusions about feeding a family on a tight budget is this -


    1. I grow my own herbs.


    2. I take advantage of sales on packages of frozen veggies and stock the freezer. I find that I have less waste with frozen veggies.


    3. Pasta is filling, inexpensive, offers lots of variety and healthy. Try the Barilla Plus variety. It is whole grain with lots of omega-3.
    My kids favs is when I make baked macaroni and cheese. There's also taco's, not too expensive. Chicken fried rice. The fail proof spaghetti and meatballs, homemade sauce of course. Or, one more thing my kids love is ';cheapy'; pizza (regular slice bread, put pizza sauce, meats and cheese on it, then bake for 10 minutes in oven).





    Go to allrecipes.com, they have loads and loads of things to try, most of which do really taste great and cheaply made.

As the name suggests, it's a minimalistic approach to cooking that is obviously quicker, easier, and cheaper, but still delicious.     I got it at Borders Bookstore for $8 I think. Some of the recipes are a little bit high brow, but most of them are great, practical family meals that work on a budget as you don't have to have too many ingredients to buy.     DIRECTIONS


    Toss the lettuce, strawberries, blueberries, mango, tomatoes, raisins, almonds, and onions together in a salad bowl. Cover, and refrigerate at least 30 minutes to allow the flavors to mingle. Do not refrigerate more than 4 hours.


    Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until crisp and evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Crumble and sprinkle over the salad to serve.

    square pan: l spread a layer of refried beans with some cumin added





    next on top of that: black beans (drained from can)


    chopped(diced) cucumber, diced tomatoes, shredded lettuce, diced avacado (+ any other veggies you like , even shredded carrot...I add a ton of veggies-it helps make this last longer because it gets eaten sooo fast!)





    on top of that add chopped cilantro and maybe some onion ( I don't add much onion..enough to taste)


    ( I usually add shredded cheddar too)





    The very top I add some sprinkles of lemon juice (from one of those plastic squeezies)

    2 tbs olive oil


    1/2 onion, chopped


    2 garlic cloves, crushed


    1 cup (250ml) thin cream


    2 tbs sundried tomato paste


    425g can tuna in oil, drained


    1 cup (150g) frozen peas


    1 tbs chopped flat-leaf parsley


    100g semi-dried tomatoes


    2 tsp capers, rinsed, drained


    Method


    Cook pasta in boiling salted water until al dente. Drain and toss with half the oil.


    Heat remaining oil in a large frypan over medium heat, add onion and cook 2-3 minutes or until softened. Add garlic and cook for 1 minute. Stir in cream and paste, add tuna and peas. Heat gently for 1-2 minutes. Stir in half the parsley with the tomatoes and capers, add pasta and season. Stir until just heated through. Serve sprinkled with remaining parsley.

    2 (6 1/2 oz.) cans tuna


    1 (8 oz.) pkg. tortellini pasta, filled with Parmesan cheese


    4 boiled eggs, chopped


    Sm. onion, chopped


    1/2 c. sweet salad cubes

    Cook pasta in 2 1/2 quart boiling salted water, approximately 25 minutes. Drain and cool. Add all other ingredients to pasta. Mix with mayonnaise to taste. Serve with fruit for a light but filling meal. (May also be used with chicken).

    In deep 4 quart saucepan over high heat, bring 2 quarts water, covered, to boil, 8 to 10 minutes.


    Meanwhile, in 10'; skillet over medium high heat, heat oil, add onions and garlic, cook about 5 minutes, stirring frequently until softened. Add tomatoes with their liquid, basil and 1/4 cup water, bring to boil. Reduce heat to low, simmer, uncovered 5 minutes to blend flavors, stirring occasionally to break up tomatoes. Add pasta to boiling water. Cook 5 minutes. To skillet, add tuna, lemon peel and pepper. Cook 1 to 2 minutes longer until heated through. Drain pasta and pour tuna mixture.
    Tuna sandwich?
    Throw it in a batch of mac and cheese and flavor with Tabasco and black pepper! OOOOH YEAH!





    Or you can put it on a half of a hard roll with some provolone cheese on it, Broil it till the cheese it nice and brown, throw on some lettuce and tomato and you got a tuna melt!

    OOOOH this is the best. I don't have the exact measurements but...


    Get a bag of egg noodles, boil them according to package directions. Add a can of cream of mushroom soup,(or more if u want) and add a couple cans of tuna. Stir it over low heat until it's all mixed. You can also add shredded cheddar cheese. Add salt and pepper, and serve with potatoe chips on top. Not the healthiest meal but it's great comfort food, and even better the next day.

    I make tuna mayo , you can put it in sushi or make a really tasty salad with it or put it in a sandwich or a wrap... Just add heaps of egg mayonnaise , a few spoons of white vinegar and a pinch of salt and pepper! Its hell good try it! :-D
    Tuna Tidbits.





    Ingredients


    14 oz of tuna fish (or two 7-oz cans)


    1 whole egg


    1 heaping tsp baking powder


    陆 cup sifted flour





    Directions


    Open the tuna and drain the oil or water into a measuring cup. Now dump the tuna into a mixing bowl and add one whole egg. Use a fork to mix the tuna and egg and, when it has been mixed up good, add 陆 cup flour and mix this thoroughly with the fork again. This mixture will be real thick. It is supposed to be like this. You may add some pepper, but it shouldn鈥檛 need more salt. Now, take your measuring cup and pour off all but 录 cup of the liquid and add 1 heaping tsp of baking powder. Beat this with a fork. It is going to foam, and that is what we want. Your measuring cup should be 3/4 full with foam. This is what makes the difference in the end result. (If it doesn't foam, your baking powder may be old.) After the liquid has foamed, pour this into the tuna mixture. Mix again with your fork. It is going to be thin, but that is the secret . . . don't worry. Using two teaspoons, dip up about a half-spoonful of the batter and scoop it off with the other spoon into a deep fryer half-full with hot oil. Don't worry about the scoops being perfectly shaped, they are better when they are all squiggly.


    These tasty little tidbits don't even have to be turned. They will float on top of the hot oil and turn themselves over as they cook. And they'll be done in a few seconds.


    The batter cannot be made ahead of time and used later. You must use this within about 15 minutes.











    Tuna Croquettes





    Ingredients


    录 cup butter OR margarine


    陆 cup chopped onion


    陆 cup diced green pepper


    2 tsp curry powder


    12 oz chunk light tuna in spring water


    2 cups fresh bread crumbs


    1 cup shredded cheddar cheese


    2 eggs, lightly beaten


    2 tbsp chopped parsley


    陆 tsp salt


    录 tsp Pepper


    录 cup all purpose flour


    陆 cup fine dry bread crumbs


    1 egg


    1 tbsp water


    录 cup butter OR cooking oil





    Directions


    In skillet, melt 录 cup butter. Add onion, green pepper and curry powder and cook until onion is transparent, about 5 minutes. Turn into large bowl.


    Add tuna, bread crumbs, cheese, two eggs, parsley, salt and pepper. Mix thoroughly.


    Divide tuna mixture into 8 equal portions. Shape each to form an oblong. Place flour and dry bread crumbs on two separate pieces of waxed paper.


    In shallow bowl, beat remaining egg and water. Roll each croquette in flour, coat evenly with egg and roll in bread crumbs.


    Place on baking sheet. Cover with waxed paper. Refrigerate until ready to cook.


    To cook, saut茅 croquettes in butter or oil until evenly browned on all sides.











    DILLED TUNA CUCUMBER SALAD





    Ingredients


    1 (6 oz) can water-packed white tuna, drained


    陆 cucumber, peeled, seeded, diced


    2 small green onions, thinly sliced


    2 tbsp chopped fresh dill


    2 tbsp nonfat yogurt


    2 tbsp reduced-calorie mayonnaise


    陆 tbsp Dijon mustard





    Directions


    Combine all ingredients in small bowl. Mix well. Season generously with pepper. Serve salad chilled. Serve on a bed of lettuce with dill sprigs and sliced ripe tomatoes or pile onto whole wheat bread with crisp lettuce for a satisfying sandwich.


    Serves 2.

    Why do some recipes work when beating egg and others don't?

    One sponge recipe will say to seperate the egg white, beat till forms a peak and then folk the yolk in later. Other recipes will say whisk up the whole egg till it is aerated etc. If you followed the recipe where you separate the egg white from the yolk and you accidentally got a bit of yolk in, then the fat from it will destroy the beating properties and it won't aerate properly. Why is it different when beating the whole egg for a sponge which turns out with great success?Why do some recipes work when beating egg and others don't?
    ';Other'; recipes, like souffles usually require the whites beaten separately %26amp; to form peaks. In simple terms, that is what makes it puff. Different procedures serves different purposes for different recipes. In a souffle, even a bit of yolk in the beaten whites will inhibit the souffle from rising. A sponge cake is a completly different texture than a souffle. Even the egg temp will have an effect on whether it will rise properly. Hope that helps.

    Try Irish soda bread.

    I found a recipe that used beer instead of yeast in a Reader's Digest.





    4 cups flour


    2 tbsp baking powder


    1 tsp salt


    1/4 cup sugar


    12 ounces (1 can) beer


    2 eggs, slightly beaten





    Preheat oven to 375* farenheit. Sift together flour, powder, salt, and sugar. Add beer and eggs, and stir batter is just blended. Pour in greased 9x5x3 loaf pan and bake for around 70 minutes. Remove from pan and let cool.





    The original recipe calls for Guiness beer, but I've found other beers work too. Also, I've increased the sugar and added cinnamon, nutmeg, and allspice for a marvelous holiday bread.

(salt pepper and onion) place meat in middle of cabbage leaf and wrap like a christmas gift.. put in pan and cover with some tomato juice and cook...
    Yams ad Green Apples (A sweet and sour treat)





    3 large yams


    3 large Granny Smith apples


    1/2 cup honey


    1 tsp. ground cinnamon


    1/3 cup brown sugar


    1/2 cup water





    Chunk the yams (according to what size you like) and simmer in the water and honey until just before being fork tender. Peel, core and chunk the apples, add to yams along with cinnamon and brown sugar. Add 1/4 tsp. salt (if desired). Cook on low until apples and yams are tender but still have some firmness. Adjust the sweetnings to your taste.
    Take into consideration travel time , the time you'll be eating and if the oven is avaliable. If there is a ham or turkey in there there won't be room for a lasagna to cook for an hour. So consult with the mom- in- law and find out what type of dish she'd like you to bring. You get points for being considerate! Then make it easy on yourself it can still be special. I say work smarter not harder. Shrimp cocktail is a great appetizer. Buy the peeled shrimp and purchase a cocktail sauce and put into fancy bowls. A tortellini salad with cooked cooled tortellinis, a crunchy lettuce like iceberg or romaine, roma tomatoes, cukes and black olives with Italian salad dressing would accompany almost any main dish. Serve some Parmesan cheese on the side. Cheesecake with fruit topping for a dessert. It can hang out in the fridge for a day or two just top it with cherry pie filling when you set it out.

    Indiana Scalloped Corn Casserole





    1 pound bacon


    1/2 cup butter


    1/2 medium onion, chopped


    1/2 cup chopped celery


    1 red pepper, chopped


    1 green pepper, chopped


    5 tablespoons all-purpose flour


    2 cups sour cream


    2 pounds fresh corn (or frozen corn, thawed)


    Salt and pepper


    1 tablespoon chopped parsley


    1. Heat the oven to 350 degrees. Cook the bacon, then chop it into bite-size pieces and set it aside.





    2. Melt the butter in a large pot over medium heat. Saut茅 the onion, celery, and peppers until soft. Stir in the flour, then the sour cream, until well combined. Add the corn and most of the bacon bits and season with salt and pepper.





    3. Pour the mixture into a 9- by 13-inch baking dish and sprinkle on the remaining bacon bits and the parsley. Bake for 30 to 45 minutes, until lightly browned. (Note: for a lower-fat version of this casserole, use half the bacon, butter, and flour). Serves 6 to 8.





    Peanut Nutty Thumbprint Cookies





    1/2 cup butter


    1/2 cup light brown sugar


    1 teaspoon vanilla


    1 1/2 cups flour


    1/2 teaspoon salt


    2 tablespoons milk


    1/4 cup semisweet chocolate chips, chopped


    1/4 cup chopped skinless peanuts


    For the filling:


    3/4 cups semisweet chocolate chips


    2 tablespoons peanut butter


    2 tablespoons corn syrup


    1 tablespoon water


    1 teaspoon vanilla


    Preheat oven to 375 degrees F.


    In a mixer with a paddle attachment, cream the butter. Add the sugar and continue creaming, then add the vanilla and mix. Mix in the flour and salt. Add the milk and chopped chocolate and mix. Roll into 1 1/2-inch balls and dip the top of the ball in chopped peanuts. Place on a cookie sheet 1 1/2 inches apart and push your thumb in the middle to make a depression. Bake until light golden brown, about 10 to 12 minutes. Let cool while you make the filling.


    To make the filling, over hot water melt the chocolate then stir in the remaining ingredients. Cool 5 minutes then fill the centers of the cookies. Allow to slightly set, approximately 10 minutes.

    You can check out some cooking sites and cook books for something unusual. But I would strongly advise trying out anything new on yourself first on a smaller scale before taking it off to the inlaws. The important thing is that the dish should be delicious ...not extra difficult. I tried making a new stuffed archichoke dish when my mother-in-law was coming over and the dish didn't work out well ...so speaking from experience. Luckily she was nice about it so we had the other dishes I made and she made no mention of my failed attempt.

    I think the main thing is to keep the dough soft. Don't add too much flour. If anything, err on the side of less flour, this will give you a softer loaf.





    One really delicious thing I do with my bread is buy a block of pepper jack cheese. Cut the cheese into cubes. When you have your dough rolled out, put the cheese cubes on it, and then roll up your loaf with the cheese inside. Use a lot of cheese....so delicious.

    Making Bread





    Making your own bread needs a little hard work but it's great fun and the delicious smell and taste of freshly baked bread makes it all worth while.


    You can make a white or wholemeal loaf from this recipe depending on which flour you use.





    Ingredients:





    225g (1 陆 Cups) Strong plain white flour or plain wholemeal flour


    1 level teaspoon salt


    1 level teaspoon sugar


    15g (1 level tbspoon) soft tub margarine


    1 sachet (6g) easy blend dried yeast or fast action easy blend dried yeast


    150 ml (2/3 cup) warm water - NOT HOT!





    What To Do:





    Get an ADULT to help!





    Wash your hands thoroughly in soap and water.





    Collect all the tools and ingredients together.





    Put the flour in the mixing bowl and add the sugar and the salt.





    Add the margarine and rub into the flour using your finger tips.





    Add the dried yeast and stir into the flour mix





    Add all the water at once to the flour mix and stir together using the wooden spoon.





    Use your hands as the dough gets tough and when it leaves the sides of the bowl clean (add a little more flour if it is too sticky), put the dough onto a floured surface.





    Now the hard work! The dough will feel tight and lumpy and you must 'knead' it to make it smooth and stretchy. Push your hands into the dough, gather it back into a ball, turn it slightly and then repeat. Do this for about 5 minutes until the dough feels smooth.





    Shape the dough into your own design or use one of the ideas below and place it on the greased baking tray.





    Cover the shape with the oiled cling film to stop it drying out and then put the tray in a warm place so that the yeast can work and make the dough rise. In winter this might be the airing cupboard, or in summer the kitchen itself may be warm enough.





    Now set the oven to 230掳C/450掳F/Gas Mark 8


    When the loaf shape has about doubled in size (after about 30 minutes), remove the cling film and place the tray in the centre of the oven.





    Bake the loaf for 20-25 minutes. It should be golden brown and sound hollow when tapped underneath.





    Put the loaf on a wire rack to cool and the tuck in!

    1. If your turkey is not basted or injected (see the label on your turkey) with a saline/broth solution, then you should consider brining the turkey. The brine will increase the moisture content of the bird and bring in the extra flavor.





    For a basic brine, 1 cup Diamond Crystal Kosher Salt or 3/4 C Morton Kosher Salt and 1/2 cup packed dark brown sugar per gallon of water.





    2. Get an instant read thermometer so you don't overcook the bird... 180F in the thigh and 165F in the breast. Pull the bird out about 5 to 10F lower than desired so the carryover heat will bring it the desired temperature. Works for oven roasted or deep fried.





    3. Consider deep frying the turkey. I've deep fried a few brined birds and the flavor comes out great. Also, it cooks in half the time of an oven roasted bird. Deep frying takes about 3 to 4 minutes per pound.

    Smear turkey with butter then wrap in cheese cloth and baste with the juice from the turkey.
    I use chicken broth and it has never failed me. I bast my turkey every 30 minutes or so with chicken broth while it is cooking. I also keep the turkey completely covered while it is in the oven. Moist as can be and it just melts right off the bone...Tasty stuff!
    I usually just do not defrost the turkey completely because the middle will help produce more juice from the inside out. This has worked for me every year. Good luck.

    place the turkey on a cutting board breast side up and using a boning knife separate the breast from the legs and wings . Roast the breast until done and still juicy remove from oven . Continue cooking the legs and wings until they too are done.


    Carve the meat in the kitchen and arrange on a platter.

    i think the best ay is one of the oven roaster bags...they are so moist and juicy after they cook, and the clean up is easy!!
    I am going to do an oven roster bag as well as injecting the turkey. I am going to try Tony C';s cajin butter. They guy that works for Tony C's says it is not hot. He says it will keep the turkey moist. We will see how it goes. I have never done injecting before. Try it and see how you like it. Lots of people do it and they say it is great!!
    roasting in the bag is the best,, if you dont have that, then get a roaster pan with a good lid to seal in the moisture, baste baste baste (loads of work).. and a little hint I learned.. roast the turkey, breast side down, it wont look as pretty, but the meat will be moister cause the breast is the dryest and if its down, all the water from the thighs leg area will flow downwards into the breast meat as it roasts.. then if you want a crispy looking breast, just flip it the last second, turn on your broiler and brown up the breast area in 5 min..
    Brine your turkey-- meaning, soak it in a pot of salted water for a day or two before marinating... look for the recipe [I read about it in the LA times].. It is about 1 cup salt with 1 gallon [ratio]. An egg will float when it's good. Wash off the salt when you are ready to marinate. Cook like it was a normal turkey.
    Use a temp-probe in the deepest part of the thigh.


    Anything between 165 and 180-degrees is said to be ';done';.


    The lower the temp in the allowable range will produce a moist turkey, higher temps produce less moist meat.


    End of problem.


    P.S. this temp is out of the oven. It doesn't allow for carryover cooking. This will increase the temp about 5 degrees.

    Make a trifle with Oreo cookies. There is no recipe, just throw it together. You know anything you would put on an ice cream sunday or hot fudge sunday and layer it.. You ca'nt mess it up.. Tell them it is suppose to be that way!!


    Mix a couple cups of ice cream with a couple softened Philadelphia cream cheese, the line the pan with crunched oreo's %26amp; drizzle melted carmel over the crushed cookies, pour the mix over it. Keep layering till you use it all. Top with more oreos and drizzle melted carmel over it. Freeze. and leave ithe the freezer. Tastes like ice cream sandwiches..

    one of the best things, especially when you're sick, is to make a cup of hot chocolate. one it's done, drop a few pieces/few chocolate chips in the bottom. then crumble or just set the graham crackers in the hot chocolate and add marshmallows on top. it's awesome.

    If you have any cream, then melt the chocolate with a little cream, and use it as a dip for the marshmallows and crackers - chocolate fondue! :]





    Another idea is to make hot chocolate, and use the ingredients as toppings. You could either use cocoa powder to make the hot chocolate, or since you have chocolate you could make real hot chocolate using milk and melted chocolate - heat the milk in a pan, then add 25g of chopped chocolate and stir until it melts. You could flavour it with cinnamon or vanilla essence if you have any. Then pour into a mug, and top with chopped marshmallows, crunched up graham crackers, and grated chocolate.     Bacon-Wrapped Chicken Breasts





    4 boneless, skinless chicken breast halves


    1 (3-ounce) package cream cheese, softened


    4 teaspoons minced green onion


    1 teaspoon dried tarragon leaves


    1 teaspoon black pepper


    8 slices smoked bacon





    Split each breast horizontally, making a pocket and leaving one edge intact. Set aside.


    Combine cream cheese, green onion, tarragon, and black pepper. Spoon 1/4 cheese mixture into the pocket of each breast. Wrap each with 2 slices bacon and secure with wooden picks.


    Cook over medium heat on the grill or under the broiler, about 10 minutes per side, or until bacon is crisp and chicken tests done.

    Tex Mex Lime Chicken


    Use 1-2 lbs of chicken fillets or tenders


    1 lime, sliced


    1 green bell pepper, sliced


    1 yellow bell pepper, sliced

    1 habanero pepper, diced as small as you can get it (optional)


    1 medium onion, diced


    1 jar of salsa (heat depends on how you like it)


    1 bag of white corn tortilla chips (restaurant style)


    olive oil





    In a medium skillet with 2tbsp olive oil, add chicken and onions...cook for about 5 minutes...add half of the lime slices and cook until chicken is done all the way through.


    Add peppers to chicken, cover, and cook for about 5 minutes (enough to heat the peppers up, but not to cook them until they are soft)


    Put chicken on top of chips and salsa and add remaining lime slices as a garnish. Adding a little cream cheese is good, also. This recipe serves 5-6 people, but you can freeze what's leftover.
    1) Get some chicken (think you've got that already)


    2) Fire up the grill (CHARCOAL, no gas!!!)


    3) Toss on some wet mesquite when the coals turn gray


    4) Season the chicken with Tony Chachere's Cajun seasoning and throw 'em on Old Smokey, cover, and grill 'em for about 15-20 minutes (low/medium heat, full breast pieces)





    If you use gas, I hope they burn. That's blasphemy.
    Here is an easy one--Marinate chicken breasts in Greek salad dressing then grill. I use a George Foreman grill, about 4 minutes, turn them over %26amp; grill 4 more minutes

    1/4 cup KRAFT Roasted Red Pepper Italian with Parmesan Dressing, divided


    2 small boneless skinless chicken breast halves (1/2 lb.)


    1/2 cup cherry tomatoes, halved


    1/2 cup KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese


    2 Tbsp. chopped fresh basil


    4 cups lightly packed baby spinach leaves


    1/4 cup thinly sliced red onions











    PREHEAT grill to medium-high heat. Brush bread slices with 1 Tbsp. of the dressing. Brush chicken with 1 Tbsp. of the dressing.


    GRILL chicken 5 min. on each side or until cooked through (170掳F). Meanwhile, grill bread slices 1 min. or until lightly toasted on both sides, turning over after 30 sec.

    Rainbow fruit kebabs with coconut yoghurt














    Ingredients:


    1 punnet strawberries


    3 kiwi fruit


    1/2 pineapple


    1/2 watermelon


    1/2 cantaloupe


    200 g grapes


    1 small tub reduced-fat vanilla yoghurt


    2 tablespoons shredded coconut


    25 small bamboo skewers














    Method:


    1. Carefully slice the watermelon into 3cm slices, leaving skin intact.


    2. Scoop out the flesh, cut into 3 cm cubes.


    3. Wash and hull strawberries, peel and cut kiwi fruit into wedges, peel and cut cantaloupe and pineapple into 3cm cubes. Wash grapes.


    4. Thread fruit on to skewers in a rainbow of colours.


    5. Turn watermelon skin upside down and push rainbow skewers into the skin. Continue covering the canteloupe skin with rainbow skewers.


    6. Place the shredded coconut on an oven tray and place in heated oven set at 200C, until brown. Allow to cool and mix through yoghurt.


    7. Serve skewered fruit with yoghurt dipping sauce.

    Tacos. It's a bit messy, but it allows everyone to make exactly what they want. Just chop up lettuce, tomatoes, and onions, set out some sour cream, guacomole, salsa, ground beef, and maybe a turkey or tofu meat substitute, with soft and hard taco shells. You can also add beans and rice as a side. We did this for my brothers birthday a year or two back and it went over really well.
    CINNAMON ROLLS:





    Ingredients:





    1 1/2 cup flour (unbleached white flour is best)


    1 teaspoon baking powder


    1/2 teaspoon salt


    1/2 teaspoon baking soda


    1 1/2 teaspoon yeast


    1 tablespoon vegetable oil


    3/4 cup milk


    1/4 cup sugar


    2 tablespoon cinnamon


    1/8 cup melted margarine





    for icing:


    1/2 cup sugar


    1 tablespoon milk


    1 teaspoon vanilla extract





    Directions:





    preheat oven for 375. mix dry ingredients first. add oil and milk and mix until dough becomes sticky mass. melt margarine and mix cinnamon and sugar together in a separate container. spilt dough in half, (using some flour to reduce stickiness) flatten dough into a rectangular shape-approximately 4x8 inches. spread half of the melted margarine onto dough and then sprinkle on cinnamon/sugar mix until it is covered to your liking. roll the dough into a long tubular shape and cut into mini rolls (cutting approximately every inch and a half) place mini rolls into a non stick pan, and repeat above steps with second half of dough. bake for 9-12 minutes.





    to make icing: blend sugar until it is powdery, add milk and vanilla extract and pour onto rolls immediately after taking them out of the oven.





    Serves: 2-4





    Preparation time: 20 minutes








    MUFFINS:





    Ingredients:





    1 cup flour


    1 teaspoon baking soda


    1/2 teaspoon salt


    1/2 teaspoon cinnamon


    1/2 cup sugar free applesauce


    1/2 cup sugar


    1/2 cup water





    Directions:





    Spray 12 cup muffin tin and preheat oven to 350. Mix flour, soda, cinnamon and salt together. Add applesauce, sugar substitute and water, mix until just blended. Bake at 400 for 10-15 minutes or until tops have lightly browned.





    You could make these with milk and diced apples and nuts mixed in, but it will alter the calorie content (which is approximate). I have also made these with half a mashed banana instead of applesauce, but again, that alters the calories.





    Serves: 12





    Preparation time: 10 minutes











    COOKIES:





    Ingredients:





    2 cups unbleached flour


    2 tsps baking powder


    1/2 tsp.salt


    cinnamon to taste (optional)


    chocolate or carob chips - put in as many as you like


    1 cup raw sugar


    1/2 cup canola or vegetable oil


    1 teaspoon vanilla


    1/4 cup water





    Directions:





    VERY IMPORTANT-make sure all ingredients are at room temperature. It will work if they're not at room temp but it works MUCH better if they are. Also while your oven is pre-heating put the cookie sheets you are going to use on top of the oven so they get preheated as well. Preheat oven to 350.





    In a large bowl mix flour, baking powder, salt, cinnamon (if you choose). Add chips. Make a well in the center and set aside.





    In a medium size bowl mix sugar and oil. Mix it well. Add the vanilla and then add the water. Mix it well. Add the wet to the well in the dry. Mix it well but be careful not to overwork it. Add more chips if you need to. Spoon onto ungreased cookie sheets. Put them in the oven. Bake for 5 minutes and then flip and rotate the sheets.(top to bottom,and 180 degree rotation) Bake another 4 minutes and check them.





    The cookies are done when they seem a little bit softer then you want them to be. They will harden up some as they cool. I usually go in two minute increments from here untill they get to where I like them.





    Take them out when they are done and move them to wire cooling racks. If they split or come apart when you try to remove them let them sit on the pan for 2 minutes before transferring them to the racks.





    Serves: almost two dozen





    Preparation time: 15 mins?-10 to 12 cooking time











    BROWNIES:





    Ingredients:





    2 cups flour (I use enriched and whole wheat)


    1 cup water


    1 cup brown sugar


    1 cup sugar


    1 teaspoon salt


    1 teaspoon vanilla extract


    3/4 cup baking cocoa


    1/2 cup oil - preferably vegetable oil


    1/2 teaspoon baking powder


    1/2 cup chopped nuts (optional)


    1/2 cup chocolate chips (optional)





    Directions:





    1. Boil water and 1/2 cup of the flour over low heat, stirring constantly, until it reaches the consistency of a thin gluey paste. Remove from heat and let cool completely.





    2. Mix sugar, salt, vanilla, cocoa and oil. Then add the rest flour-water mixture. Mix well.





    3. Add the remaining 1 1/2 cups of flour, baking powder and the nuts or chocolate chips, if you choose to add those.





    4. Spread

    Not knowing what her favorite foods are or how many people you will be feeding, I can only offer my favorites, and think what 16 year olds might like:-)





    Others that I enjoy making include gourmet burgers like garlic onion (not to powerful on the garlic though) Green Chile Cheddar Burgers or Jalapeno burgers. I have a great orzo pasta salad that is so flavorful along with a fantastic napa cabbage salad, very tasty and crunchy.

    3/4 cup Italian seasoned bread crumbs


    1 (1 ounce) package dry Ranch-style dressing mix


    2 1/2 tablespoons vegetable oil


    1 pound tilapia fillets


    2 teaspoons butter


    DIRECTIONS


    Place the bread crumbs in a bowl. In a shallow dish, mix the dressing mix and oil to form a paste. Coat the tilapia fillets with the paste, then dredge in the bread crumbs to lightly coat.

    Do a basil pesto tilapia. It is dirt simple -





    get 1 cup pesto


    1/3 cup pinenuts


    1/3 cup butter

    Bake or steam - your choice. I like to bake wrapped in parchment paper. Top with parmesan or romano and serve with steamed veggies and a rice pilaf or risotto.

    Portuguese Fish Chowder


    Serves 4





    spray oil


    1 bay leaf


    2 garlic cloves, minced


    1 medium onion, cut into 戮-inch dice


    1 green bell pepper, cut into 1/2-inch dice


    pinch ground allspice


    1 pound Yukon Gold potatoes, 1/3 inch thick (no need to peel unless you like them that way)


    7 - 8 white mushrooms, sliced (optional)


    2 cups fish stock OR chicken stock


    1 can diced tomatoes in juice (14陆-ounce can)


    录 tsp paprika


    salt and black pepper to taste


    1 pound skinless cod fillets, pinbones removed


    1 Tbsp fresh cilantro, chopped


    Garnish with 2 tablespoons parsley, chopped





    Heat a heavy pot over medium heat and add the olive oil and bay leaf. As soon as the bay leaf turns brown, add the garlic and cook, stirring constantly for 30 seconds or until it is golden. Add the onions, bell pepper, and allspice and saute, stirring occasionally, for about 8 minutes, until the onions and peppers are softened but not brown.


    Add the potatoes, mushrooms, and stock; if the stock doesn't cover the potatoes, add just enough water to cover them. Turn up the heat, bring to a boil, cover, and cook the potatoes vigorously for about 10 minutes, until they are soft on the outside but still firm in the center.


    Reduce the heat to medium, add the tomatoes and paprika, and simmer for 5 minutes. Season with salt and pepper.


    Remove bay leaf.


    Add the whole fillets and cook for 5 minutes, then remove from the heat, gently stir in the cilantro, and allow the chowder to sit for 10 minutes. The fish will finish cooking during this time. Check the fish for doneness. NOTE: if your piece of fish is thin, check for doneness SOONER.


    Use a slotted spoon to lift the chun ks of fish, tomatoes, peppers, and potatoes in the center of large soup plates or shallow bowls, and ladle the savory tomato broth over. Sprinkle with the chopped parsley.

    Oven Fried Tilapia





    INGREDIENTS:





    1 to 1 1/2 pounds tilapia fillets


    2/3 cup flour


    3/4 cup plain bread crumbs


    1/4 cup cornmeal


    1/2 teaspoon Creole seasoning


    1/2 teaspoon salt


    1 teaspoon dried parsley flakes


    1/2 teaspoon dried leaf thyme, crumbled


    2 large eggs


    2 tablespoons milk


    2 to 3 tablespoons melted butter, optional





    PREPARATION:





    Rinse tilapia fillets with cold water; pat dry.


    Put flour in a shallow bowl or plate.





    In another shallow bowl or pie plate, combine bread crumbs, cornmeal, seasonings, and herbs.





    In another shallow bowl or pie plate, whisk eggs with cream or milk.





    Dip fillets into the flour, then into the egg mixture, then dip in seasoned crumb mixture. Place on a baking sheet sprayed with butter-flavored nonstick cooking spray. If desired drizzle each fillet with a little melted butter.





    Bake at 400掳 for 10 to 15 minutes, or until fish flakes easily with a fork.


    Serves 4 to 6.
    I just put it on a microwave safe plate and sprinkle with salt, pepper, dried tarragon, molly mcbutter, and lemon juice. Cook on high for about 3 min, turn over and about another minute should do it. I love it this way and it's really healthy.
    Smash uncook rice and then roll the fish in egg and dip it in the uncook rice. Fry until cooked.
    Deep Fried Tilapia


    Ingredients:


    Tilapia Filets


    Lemon Pepper Seasoning


    Old bay seasoning


    Canola Cooking Oil


    Yellow Corn Meal (Self-rising)


    1.) After fish filets are rinsed with cold water thoroughly, lie flat on a shallow baking/dish pan. 2.) Season filets on both sides by sprinkling Old Bay Seasoning first, followed by sprinkling Lemon Pepper Seasoning. 3.) Pour 1/2 cup of Yellow Corn Meal, per each two filets, into a ziplock bag and shake until filets are entirely covered. 4.) Cooking oil should be hot and tested to see if ready by sprinkling one or two drops of water to get a pop. 5.) Filets may then be put into skillet and fried evenly til both sides are golden brown.
