I really like to make alot of the food myself, so it's a bit special. Are there any recipes that you've tried that you could recommend.Are they any recipes that you can recommend for my daughters 16th birthday party next week?
Rainbow fruit kebabs with coconut yoghurt
Ingredients:
1 punnet strawberries
3 kiwi fruit
1/2 pineapple
1/2 watermelon
1/2 cantaloupe
200 g grapes
1 small tub reduced-fat vanilla yoghurt
2 tablespoons shredded coconut
25 small bamboo skewers
Method:
1. Carefully slice the watermelon into 3cm slices, leaving skin intact.
2. Scoop out the flesh, cut into 3 cm cubes.
3. Wash and hull strawberries, peel and cut kiwi fruit into wedges, peel and cut cantaloupe and pineapple into 3cm cubes. Wash grapes.
4. Thread fruit on to skewers in a rainbow of colours.
5. Turn watermelon skin upside down and push rainbow skewers into the skin. Continue covering the canteloupe skin with rainbow skewers.
6. Place the shredded coconut on an oven tray and place in heated oven set at 200C, until brown. Allow to cool and mix through yoghurt.
7. Serve skewered fruit with yoghurt dipping sauce.

Tacos. It's a bit messy, but it allows everyone to make exactly what they want. Just chop up lettuce, tomatoes, and onions, set out some sour cream, guacomole, salsa, ground beef, and maybe a turkey or tofu meat substitute, with soft and hard taco shells. You can also add beans and rice as a side. We did this for my brothers birthday a year or two back and it went over really well.
CINNAMON ROLLS:
Ingredients:
1 1/2 cup flour (unbleached white flour is best)
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 teaspoon yeast
1 tablespoon vegetable oil
3/4 cup milk
1/4 cup sugar
2 tablespoon cinnamon
1/8 cup melted margarine
for icing:
1/2 cup sugar
1 tablespoon milk
1 teaspoon vanilla extract
Directions:
preheat oven for 375. mix dry ingredients first. add oil and milk and mix until dough becomes sticky mass. melt margarine and mix cinnamon and sugar together in a separate container. spilt dough in half, (using some flour to reduce stickiness) flatten dough into a rectangular shape-approximately 4x8 inches. spread half of the melted margarine onto dough and then sprinkle on cinnamon/sugar mix until it is covered to your liking. roll the dough into a long tubular shape and cut into mini rolls (cutting approximately every inch and a half) place mini rolls into a non stick pan, and repeat above steps with second half of dough. bake for 9-12 minutes.
to make icing: blend sugar until it is powdery, add milk and vanilla extract and pour onto rolls immediately after taking them out of the oven.
Serves: 2-4
Preparation time: 20 minutes
MUFFINS:
Ingredients:
1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup sugar free applesauce
1/2 cup sugar
1/2 cup water
Directions:
Spray 12 cup muffin tin and preheat oven to 350. Mix flour, soda, cinnamon and salt together. Add applesauce, sugar substitute and water, mix until just blended. Bake at 400 for 10-15 minutes or until tops have lightly browned.
You could make these with milk and diced apples and nuts mixed in, but it will alter the calorie content (which is approximate). I have also made these with half a mashed banana instead of applesauce, but again, that alters the calories.
Serves: 12

COOKIES:
Ingredients:
2 cups unbleached flour
2 tsps baking powder
1/2 tsp.salt
cinnamon to taste (optional)
chocolate or carob chips - put in as many as you like
1 cup raw sugar
1/2 cup canola or vegetable oil
1 teaspoon vanilla
1/4 cup water
Directions:
VERY IMPORTANT-make sure all ingredients are at room temperature. It will work if they're not at room temp but it works MUCH better if they are. Also while your oven is pre-heating put the cookie sheets you are going to use on top of the oven so they get preheated as well. Preheat oven to 350.
In a large bowl mix flour, baking powder, salt, cinnamon (if you choose). Add chips. Make a well in the center and set aside.
In a medium size bowl mix sugar and oil. Mix it well. Add the vanilla and then add the water. Mix it well. Add the wet to the well in the dry. Mix it well but be careful not to overwork it. Add more chips if you need to. Spoon onto ungreased cookie sheets. Put them in the oven. Bake for 5 minutes and then flip and rotate the sheets.(top to bottom,and 180 degree rotation) Bake another 4 minutes and check them.
The cookies are done when they seem a little bit softer then you want them to be. They will harden up some as they cool. I usually go in two minute increments from here untill they get to where I like them.
Take them out when they are done and move them to wire cooling racks. If they split or come apart when you try to remove them let them sit on the pan for 2 minutes before transferring them to the racks.
Serves: almost two dozen
Preparation time: 15 mins?-10 to 12 cooking time
BROWNIES:
Ingredients:
2 cups flour (I use enriched and whole wheat)
1 cup water
1 cup brown sugar
1 cup sugar
1 teaspoon salt
1 teaspoon vanilla extract
3/4 cup baking cocoa
1/2 cup oil - preferably vegetable oil
1/2 teaspoon baking powder
1/2 cup chopped nuts (optional)
1/2 cup chocolate chips (optional)
Directions:
1. Boil water and 1/2 cup of the flour over low heat, stirring constantly, until it reaches the consistency of a thin gluey paste. Remove from heat and let cool completely.
2. Mix sugar, salt, vanilla, cocoa and oil. Then add the rest flour-water mixture. Mix well.
3. Add the remaining 1 1/2 cups of flour, baking powder and the nuts or chocolate chips, if you choose to add those.

Not knowing what her favorite foods are or how many people you will be feeding, I can only offer my favorites, and think what 16 year olds might like:-)
Others that I enjoy making include gourmet burgers like garlic onion (not to powerful on the garlic though) Green Chile Cheddar Burgers or Jalapeno burgers. I have a great orzo pasta salad that is so flavorful along with a fantastic napa cabbage salad, very tasty and crunchy.
