My soups would be my most random dish. It will never be the same twice, so there is no nicely detailed list of ingredients.
I will start with a basic vegetable soup stock, onions, carrots and celery and add two gallons of water and bring to the boil.
I will add a smoked pork hock and then simmer until the meat is all but falling off the bone. (2 hours?).
Remove the hock and let cool.
In the mean time I will empty out the freezer of all those partly full bags of frozen vegetables and add them.
If I have a part bag of pasta spirals or macaroni I add them.
As that is coming back to the boil I will pull the meat from the bone chop into chunks and return the meat to the pot.
At the last minute I will taste test it adding some more salt if necessary.
As there in just the two of us I will leave some in the fridge and freeze the rest.

Try this, a favorite in college actually we ate well.
Mac and cheese, when cooking the macaroni, just before removing the water add a can of sliced mushrooms. In a frying pan, saute some ground beef with onions. Your kitchen will smell great. Make the Mac, cheese with the mushrooms then add the beef. Serve with cheap beer or a coke.
My ex-boyfriend used to make oodles of noodles pasta- 2 ooodles packages, cook as directed and add catsup, whatever spices you have- add candlelight and enough red wine and you may even think it is a gourmet meal!
